Pottukadalai urundai also known as pottukadalai mittai, is a simple South Indian sweet made with pottukadalai, jaggery and cardamon. It is one of those easy homemade traditional sweets that needs only a few ingredients and comes together in less than 20 minutes.
Dry Roast gram dal for 2 to 3 minutes until slightly golden. Remove this to a plate and set aside to cool completely.
Take jaggery and water in a heavy bottom pan and heat till jaggery melts, Strain this through a sieve to extract the jaggery water. Now take it back in the same pan.
Now add in cardamom powder and bring it to a boil. Now you have to cook till it gets hard ball stage.
When you take some syrup and pour it in a bowl of cold water, you should be able to gather the syrup into a ball and it gets hard ball and make a "donk" sound when you drop in a steel plate. This is the hard ball consistency.
Once the syrup reaches this consistency. Now take it off the heat and add the roasted gram dal and mix well. You should work very fast at this stage as the jaggery starts to harden.
Now grease your hands with ghee and take small portion and shape it into a ball. If your mixture hardens, you can place it back on gentle heat until slightly melted again and shape.
Set aside to cool. As it cools it will harden. Once cooled completely store it in an air tight container. Enjoy.
