    Pottukadalai urundai is made using roasted gram dal mixed with jaggery syrup to form ladoo like. This is a healthy and nutritious traditional sweet.

    Pori kadalai Urundai Recipe

    Pottukadalai urundai, I love all these types of ladoo. Not only it is healthy but it satisfy my sweet cravings. I have already few more variation of this recipe and this is a addition to that.

    How to Make Pottukadalai Urundai 

    • Jaggery Syrup Consistency - Take jaggery and water in a heavy bottom pan and heat till jaggery melts, Strain this and take it back in the same pan. Now add in cardamom powder and bring it to a boil. now cook till it gets hard ball stage. When you take some syrup and pour it in a bowl of cold water, you should be able to gather the syrup into a ball and it gets hard ball and make a "donk" sound when you drop in a steel plate.
    • Adding pottu kadalai - You can roast the gram dal if you want. Now take it off the heat and add the gram dal and mix well.
    • Shaping of ladoos - Now grease your hands with ghee and take small portion and shape it into a ball. Set aside to cool. Now store it in a air tight container.

    Jaggery Syrup Consistency

    • It is so easy to make. All you have to look is for the right consistency.
    • The syrup should get hard ball stage and then the rest is easy.
    • This is how you will know that the stage is attained.
    • When you take some syrup and pour it in a bowl of cold water, you should be able to gather the syrup into a ball and it gets hard ball and make a "donk" sound when you drop in a steel plate.

    Ingredients

    • 2 cups Roasted Gram Dal / Pottukadalai
    • 1 cup Jaggery / Sarkarai
    • ½ cup Water
    • ⅓½ tsp Cardamom Powder
    • Ghee for greasing hands.

    Pottukadalai Urundai Step by Step

    Measure roasted gram dal and set aside

     

    take jaggery in a pan

     

    add water

     

    heat till it melted

     

    strain this

     

    now it strained

     

    pour back in the pan

     

    add cardamom powder

     

    bring it to a boil

     

    boil till it reached hard ball stage

     

    now it is almost there

     

    take a bowl of cold water

     

    spoon some syrup

     

    gather it and it should form a hard ball like
     

     

    now take it off the heat

     

    add roasted gram dal

     

    nux well

     

    now it is combined well

     

    take small portion

     

    grease your hand with ghee and shape it into a ball

     

    done

      Mam, my doubt is regarding jaggery syrup. When I poured some syrup in a plate, it dissolved. Later in few minutes, when i poured again, i was not able to gather those syrup. It attached with the plate. Did i overcook or need to cook more?
