Ingredients
  

  • Brinjal / Eggplant - 1 big one or 5 small ones
  • Oil - 5 tblspn
  • Mustard Seeds / Kaduku - 1 tsp
  • Fennel Seeds / Sombu / Saunf - 1 tsp
  • Onion - 1 medium size sliced thinly
  • Garlic - 5 cloves chopped
  • Salt to taste
  • Sambar Powder - 1.5 tblspn

Instructions
 

  • Heat oil in a kadai. Add in mustard and fennel. Let them sizzle.
  • Add in onions and garlic along with salt. Toss well.
  • Add in brinjal and toss well in the oil. Cover and cook for 7 to 10 mins till the brinjal is ¾th cooked.
  • Now open the lid and cook on medium heat till it is roasted.
  • Add in sambar powder and mix well. Cook for few more mins.
  • Serve.
