    Brinjal Podi Fry

    Brinjal are my favourite, i make them quite often..My mum simply loves it, it is one of her favourite veggie..These sambar powder flavoured are so good. They go pretty much with anything.

    Ingredients for Brinjal Podi Fry

    • Brinjal / Eggplant - 1 big one or 5 small ones
    • Oil - 5 tblspn
    • Mustard Seeds / Kaduku - 1 tsp
    • Fennel Seeds / Sombu / Saunf - 1 tsp
    • Onion - 1 medium size sliced thinly
    • Garlic - 5 cloves chopped
    • Salt to taste
    • Sambar Powder - 1.5 tbsp

    How to Make Brinjal Podi Fry

    1. Heat oil in a kadai. Add in mustard and fennel. Let them sizzle.
    2. Add in onions and garlic along with salt. Toss well.
    3. Add in brinjal and toss well in the oil. Cover and cook for 7 to 10 mins till the brinjal is ¾th cooked.
    4. Now open the lid and cook on medium heat till it is roasted.
    5. Add in sambar powder and mix well. Cook for few more mins.
    6. Serve.
