Take a brinjal

 

slice them

 

Heat a good amount of oil in a kadai

 

Crackle in some mustard and fennel seeds

 

add in onions and garlic

 

add some salt

 

saute for a min or so

 

add in sliced brinjal

 

toss well in oil

 

cover and cook

 

now brinjal is cooked

 

 

 

keep cooking on a medium heat till it gets little golden

 

add in sambar powder

 

mix well

 

done
