Cooking Time : 25 to 30 mins
Serves : 3 to 4
Brinjal / Eggplant - 1 big one or 5 small ones
Oil - 5 tblspn
Mustard Seeds / Kaduku - 1 tsp
Fennel Seeds / Sombu / Saunf - 1 tsp
Onion - 1 medium size sliced thinly
Garlic - 5 cloves chopped
Salt to taste
Sambar Powder - 1.5 tblspn
Heat oil in a kadai. Add in mustard and fennel. Let them sizzle.
Add in onions and garlic along with salt. Toss well.
Add in brinjal and toss well in the oil. Cover and cook for 7 to 10 mins till the brinjal is ¾th cooked.
Now open the lid and cook on medium heat till it is roasted.
Add in sambar powder and mix well. Cook for few more mins.

|Take a brinjal|
|Heat a good amount of oil in a kadai|
|Crackle in some mustard and fennel seeds|
|add in onions and garlic|
|add some salt|
|saute for a min or so|
|add in sliced brinjal|
|toss well in oil|
|cover and cook|
|now brinjal is cooked|
|keep cooking on a medium heat till it gets little golden|
|add in sambar powder|
