▢ Start by cooking the gobi, take cauliflower florets in a saucepan. Cover with water and cook for 6 to 8 mins. Drain it and set aside.
▢ Heat oil in a pan, add in the whole spices and saute for a min.
▢ Add in curry leaves, onions, chillies and cook till it is golden..
▢ Add in ginger garlic paste and saute for a min.
▢ Add in all the spice powders along with some water and cook till oil separates, this prevents the spices from burning.
▢ Now add in tomato puree and cook till oil separates.
▢ Add in cooked gobi, salt , sugar and toss well in the masala. Pour water and bring it to a boil, simmer for 5 mins.
▢ Now take some curd in a bowl, add some of the gravy and mix well, this will temper the curd so it wont curdle when you add it to the curry.
▢ Now add in the curd and mix well. Simmer for another 5 mins.
▢ Add in coriander leaves and mix well.
▢ Serve with roti..
