    Cauliflower Masala Recipe / Gobi Masala Recipe

    I love cauliflower recipes, they are so tasty and can be made into pretty much anything. This is my latest favourite and love to have it with naan, paratha or roti.

    Preparation Time : 10 mins
    Cooking Time : 35 to 40 mins
    Serves : 4

    Ingredients:
    Oil - 2 tblspn
    Cauliflower - 1 medium size cut into florets
    Onion - 1 large chopped finely
    Ginger Garlic Paste - 1 tblspn
    Tomato - 2 large size pureed
    Green Chillies - 2 slit
    Curry leaves a sprig
    Chilli Powder - 1 tsp
    Black Pepper Powder - 1 tsp
    Cumin Powder / Jeeraka Podi - 1 tsp
    Coriander Powder / Malli Podi - 1 tblspn
    Turmeric Powder / Manjal Podi - 1 tsp
    Garam Masala Powder - 1 tsp
    Salt to taste
    Sugar - 1 tsp
    Unsour Curd / Plain Yogurt - ½ cup
    Coriander leaves - 3 tblspn finely chopped

    Whole Spices:
    Cinnamon stick - 1 small piece
    Fennel Seeds / Saunf / Sombu - 1 tsp
    Cumin Seeds / Jeerakam - 1 tsp
    Bay Leaf - 1
    Kalpaasi / Black Stone Flower - 1 piece

    Method:
    Start by cooking the gobi, take cauliflower florets in a saucepan. Cover with water and cook for 6 to 8 mins. Drain it and set aside.
    Heat oil in a pan, add in the whole spices and saute for a min.
    Add in curry leaves, onions, chillies and cook till it is golden..
    Add in ginger garlic paste and saute for a min.
    Add in all the spice powders along with some water and cook till oil separates, this prevents the spices from burning.
    Now add in tomato puree and cook till oil separates.
    Add in cooked gobi, salt , sugar and toss well in the masala. Pour water and bring it to a boil, simmer for 5 mins.
    Now take some curd in a bowl, add some of the gravy and mix well, this will temper the curd so it wont curdle when you add it to the curry.
    Now add in the curd and mix well. Simmer for another 5 mins.
    Add in coriander leaves and mix well.

    Serve with roti..

    saute till it gets golden

    Add in pepper, cumin and turmeric powder

    and some chilli powder

    now add in some garam masala powder

    mix well
    Pin
    add some water
    Pin
    mix well and cook till the spices are cooker and oil separates

    add in tomato puree

    add in salt and sugar

    cook till oil separates
    Pin
    now add in cooked cauiflower
    Pin
    mix well 
    Pin
    pour in some water
    Pin
    boil it
    Pin
    once it has simmered for a while

    take beaten curd in a bowl

    spoon some of the masala in this

    mix well..This will temper the curd, so it wont curdle..

    pour this into the curry

    mix well and simmer for 5 mins

      hi, how do you make tomato puree?? just grind the raw tomatoes or cook it first peel the skin and then grind it?

      Thanks.. nice recipe. tried and turned out well. While making tomato puree, I usually blanch the tomato first and then paste it after cooling. You may or may not peel the tomato after blanching depending on the recipe requirement.
