Cut tofu into big cubes. Season with salt and pepper. Sprinkle with cornflour and toss well. Heat oil in a pan, drop in tofu and fry till crispy and golden. Drain and set aside.
In the same pan, add a tblspn of oil, add in ginger, garlic, onion, capsicum and saute till golden. Add in sugar and mix well..Add in soy sauce and mix well.
Now add in the fried tofu and salt and pepper. Toss well.
Serve hot with some chopped spring onions.
