Sambar Rice also known as sambar sadham or sambar satham is a South Indian comfort food. It is a nutritious wholesome meal made with rice, lentil, vegetables making it an one pot wonder meal.

Equipment

Pressure cooker

Ingredients
  

  • cup Rice
  • ¾ cup Toor Dal
  • 1 large Onion peeled and chopped
  • 2 medium Tomato chopped
  • 1 tablespoon Salt or to taste
  • 2 tablespoon Tamarind Pulp
  • 1 teaspoon Jaggery
  • cup Water
  • 2 tablespoon Ghee to drizzle in the last
  • ½ cup Coriander leaves

Vegetable to Use

  • 1 medium Carrot chopped
  • 1 small Raw Banana / Raw Plantain / Vazhakai peeled and chopped
  • 1 small Brinjal chopped
  • 4 no Ladysfinger chopped
  • ½ cup Elephant Yam / Chenai Kilangu peeled and chopped
  • 1 medium Potato peeled and chopped
  • ½ cup Snake Gourd chopped
  • ½ cup Pumpkin / Poosanikai peeled and chopped

For Tempering:

  • ¼ cup Oil or Ghee
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Fenugreek Seeds
  • 3 no Dry Red Chilli broken
  • 2 sprig Curry leaves

Spice Powders

  • 1 teaspoon Red Chilli Powder
  • 3 tablespoon Sambar Powder
  • 1 teaspoon Turmeric Powder
  • 2 tablespoon Coriander Powder

Instructions
 

  • Wash rice and dal well in lots of water. Cover with fresh water and let them soak for 15 minutes.
  • Heat oil in a pressure cooker, add in the tempering ingredients and saute for a minute. Let them sizzle. Now add in onions, tomatoes and toss well. Cook them for 5 mins.
  • Now add in salt, jaggery and all the spice powders given and saute them for a minute until raw smell leaves. Now add in all the veggies and toss well with the masala.
  • Pour in water. Add in dal, rice and tamarind extract. Bring this to a boil and cover the pressure cooker.
  • Pressure cook for 5 whistle and simmer for 5 mins. Now switch off the flame and let them steam escape all by itself.
  • Open the cooker, Drizzle in some ghee and mix well. Serve with papad and pickle.
