For Potato Masala:

tablespoon
Oil
▢

teaspoon
Mustard Seeds / Kaduku
▢

Urad dal / Ulundu Paruppu
▢
Curry leaves a sprig
▢
a pinch of Asafoetida / Hing / Kaya Podi
▢

medium size Onion chopped finely
▢

teaspoon
Ginger chopped finely
▢

Green Chillies chopped finely
▢

medium size Carrot chopped finely
▢

large Potato - boiled
peeled and mashed
▢

teaspoon
Turmeric Powder / Manjal Podi

Salt to taste

Coriander leaves a handful chopped finely
Instructions
▢
Heat oil in a pan, add in mustard, urad dal, asafoetida and curry leaves. Let them sizzle.
▢
Add in ginger and saute for a min.
▢
Now add in onions, carrots, chillies and saute well.
▢
Add in salt and turmeric powder. Mix well.
▢
Then add in some water and bring it to a boil.
▢
Add in mashed potatoes and mix well.
▢
Throw in the coriander leaves and mix well. Masala done.
▢
Heat a dosa pan, spoon a ladleful of batter, spread it evenly.
▢
Spread some masala over it, dollop some more batter and spread it.
▢
Drizzle oil over it, cook till the bottom is done, flip over and cook for few more sec.
▢
Serve.
