Southern fried chicken is a flavour packed bomb chicken recipe. It has heavy seasoned chicken which are deep fried till crispy makes it one of the addictive chicken recipe.
Mix Seasoning - take all seasoning ingredients in a bowl and mix it really well. This is your seasoning blend. You are going to add half of it in chicken marination and other half in seasoned flour.
Marinating Chicken - Take chicken in a bowl, add in half of the seasoning. Add in chicken bouillon, hot sauce, buttermilk, salt, sugar and vinegar. Mix this really well. Cover and let it marinate in the fridge overnight.
Seasoned Flour - the next day, take plain flour, cornstarch, salt, baking powder and the remaining half of the seasoning in a large container with lid. Mix it really well and set aside.
Binding Chicken - Remove the chicken from fridge at least 1 hour before frying. Add in egg and 1 cup of plain flour to the chicken and mix it really well. This is your binding ingredient.
Dredging Chicken - Take the chicken and the seasoned flour. Take the chicken from marination and shake off any excess marination, add it to the seasoned flour. Cover it with a lid and shake it well for 10 to 20 seconds. Now take the chicken from the flour and set aside in a wire rack to dry for 1 minute.
Frying Chicken - Heat oil for deep frying. Once the oil is hot, drop chicken in the hot oil and fry for 8 to 10 minutes on medium high heat. Once fried and crispy. Remove and place on some paper towel to remove excess oil. Serve immediately.
