Strawberry fool is a classic creamy and fruity dessert which is made with fresh strawberries, whipped cream, sugar and hint of a lemon juice. In this easy dessert recipe juicy chopped strawberries are mixed with sugar and lemon juice then combined with whipped cream which makes this taste so good.
Take chopped strawberries in a bowl, sprinkle sugar and lemon juice. Mix well. leave it to marinate for 30 mins. Now the strawberries must have leached out lots of its juices.
Whip up cream till it is thick using an electric beater. Spoon most of the strawberry mix into the cream. fold gently.
Scoop into the serving glasses, spoon some of the reserved berry juices over it. Chill this in fridge for one hour. Serve cold.
Notes
Use fresh strawberries for the best flavour and colour.
For a richer taste choose full fat cream instead of low fat one.
Fold the strawberries gently into the cream to keep the texture light and airy.
Prepare the dessert a few hours in advance to let the flavour blend naturally.
If using frozen strawberries thaw them completely and drain excess liquid before mixing.
Serve immediately after chilling to enjoy the freshest taste and texture.
