Strawberry Summer Cake Recipe

Ingredients
  

  • All Purpose Flour / Maida - 1 ½ cup / 180 grams
  • Sugar - 1 cup + 2 tblspn for topping / 200 grams + 2 tblspn
  • Unsalted Butter - 6 tblspn / 85 grams
  • Vanilla Essence - 1 tsp
  • Egg - 1
  • Milk - ½ cup / 120 ml
  • Baking Powder - 1 ½ tsp
  • Salt - ½ tsp
  • Strawberries - around 2 cups or as needed

Instructions
 

  • Preheat oven to 180 degree C. Grease a 9 inch round tin with oil and dust with flour. Set this aside.
  • Mix together flour, baking powder and salt and set aside.
  • Now take butter, vanilla and sugar in a bowl and use a beater to whip this up.
  • Now add in egg and whip again till fluffy.
  • Now add in half of the flour and fold gently. Add in milk and the remaining flour and fold gently. The batter will be thick.
  • Now spoon this batter in the baking pan and top with halved strawberries. Now sprinkle sugar on top and bake for 50 to 60 mins.  Insert a toothpick to check whether the cake is done, If the toothpick comes out clean then the cake is done.
  • Now let the cake cool in the tin for 15 mins or so.Now slice and serve.
