Strawberry Summer Cake Recipe

This is one of  recipe which i wanted to bake for a very long time. . I always wanted to make a simple strawberry cake which should be easy to make and taste yum. And this is the cake..

This cake is a basic vanilla cake recipe, but has strawberries in them. You can infact use any berries as you like. And any fruits will be good as well, specially mangoes.
This cake fits for any special occasion, or you can make anyday special with this cake.. Hope you will give this a try and let me know how it turns out for you..
Preparation Time – 10 mins
Baking Time : 60 mins
Serves: 6 to 8

Ingredients:

All Purpose Flour / Maida – 1 1/2 cup / 180 grams
Sugar – 1 cup + 2 tblspn for topping / 200 grams + 2 tblspn
Unsalted Butter – 6 tblspn / 85 grams
Vanilla Essence – 1 tsp
Egg – 1
Milk – 1/2 cup / 120 ml
Baking Powder – 1 1/2 tsp
Salt – 1/2 tsp
Strawberries – around 2 cups or as needed

(My 1 cup measures 240 ml)

Method:

Preheat oven to 180 degree C. Grease a 9 inch round tin with oil and dust with flour. Set this aside.

Mix together flour, baking powder and salt and set aside.

Now take butter, vanilla and sugar in a bowl and use a beater to whip this up.

Now add in egg and whip again till fluffy.

Now add in half of the flour and fold gently. Add in milk and the remaining flour and fold gently. The batter will be thick.

Now spoon this batter in the baking pan and top with halved strawberries. Now sprinkle sugar on top and bake for 50 to 60 mins.  Insert a toothpick to check whether the cake is done, If the toothpick comes out clean then the cake is done.

Now let the cake cool in the tin for 15 mins or so.Now slice and serve.

Take all your ingredients
Grease a 9 inch tin with oil and flour it well..Set aside
Take flour in a bowl
add in baking powder and salt
mix well
in another bowl, take butter
whip it till creamy
add vanilla
add sugar and whip again till creamy
now it is fluffy
add in half the flour mix in
fold gently
add half of the milk
add in remaining half of the flour mix in
fold again gently
now the batter is done
spoon the batter in the pan
spread evenly on top
now it is spread
take your strawberries
remove the top
slice in half
arrange it on top
sprinkle little sugar on top
now bake this for 50 to 60 mins
done
Slice and serve

    I don't understand the following measurements.
    All Purpose Flour / Maida – 1 1/2 cup / 180 grams

    Dear aarthi,
    Please clarify about the measurement
    If 1 1/2 cup is 180gms
    How is 1 cup + 2 tblspn is 200 gms?

    Substitute for baking Pwdr and vanilla essence ??

      You can use any essence for vanilla. But baking powder cannot be substituted
