Take yeast and 1 teaspoon of sugar in a small bowl. Add little warm water to it and mix well. Let it sit for 5 mins till the yeast is activated.
Take sooji in a bowl, add in ¼ cup of warm water to it and let it soak for 5 mins.
Now take flour, salt, sugar, oil, yogurt, soaked sooji, yeast mix and mix well. Add water slowly and knead to a soft dough.
Cover and set aside for few hours till it doubles in size.
Now knead it well. Divide the dough into small balls.
Now lets make the filling. Heat 1 teaspoon of oil in a pan, add in cumin seeds and let them sizzle. Now add in ginger and garlic and saute for a min.
Add in onions, chillies and saute till light golden.
Add in spice powders and salt and mix well. Now pour this over potatoes and mash well. Add in coriander and mix well. Filling done.
Now take each ball and Roll each ball into a round disc. Place filling in and bring the edges together and pinch it well.
Now flatten it and spread it lightly.
Heat oil for deep frying and fry the battura till puffy.
Drain and serve.
