Ingredients

For Sweet Potato Jamuns

  • 2 cups Sweet Potatoes steamed, peeled and mashed
  • 4 tablespoon All Purpose Flour (Plain Flour)
  • ¼ teaspoon Salt
  • Oil or Ghee for Deep frying

For Sugar Syrup

  • 2 cups Granulated Sugar
  • 2 cups Water
  • 2 no Cardamom crushed
  • ¼ teaspoon Rose Water optional
  • ¼ teaspoon Saffron optional

For garnishing

  • 2 tablespoon Pistachios chopped finely

Instructions
 

  • Start by making sugar syrup. Take sugar and water in a sauce pan, heat and bring it to a boil, boil it for 5 mins, it will get sticky in this time. The syrup should be sticky stage.
  • Add in cardamom, rose water and saffron and mix well. Now keep this syrup warm until we make the jamuns.
  • Now for jamun filling. Take cooked sweet potatoes in a bowl. Peel off the skin. Mash them really well so there is no lumps. You can pass this through a sieve so there is no lumps.
  • Now measure 2 cups of mashed sweet potatoes and take it in a bowl. Add in salt, plain flour and knead to a soft and smooth dough.
  • Now take small portion of the dough and roll it into a smooth ball. Roll all the dough just like this.
  • Now heat oil for deep frying. drop the rolled jamuns in hot oil one by one and fry on a medium heat till golden. Keep mixing this for even colouring. It should be golden in colour. It will take around 5 to 6 minutes of frying.
  • Now strain them and add to the warm syrup immediately. Let them soak for 30 minute. The jamuns will absorb the syrup better.
  • Remove the jamuns carefully into a bowl and chill. Serve cold.
