Tomato Juice | Fresh Tomato Juice Recipe is a refreshing delicious juice made with tomatoes, lemon and flavourings. Tomatoes are usually available in abundant during summer season, so make use of those and make this delicious summer juice. Wash tomatoes and take it in a sauce pan, cover with hot water and bring it to a boil. Once it reaches a boil take it off the heat. Now remove the tomatoes from hot water and soak them in cold water. Peel off the skin and set aside.
Now take it in a blender and puree till smooth. Strain the mixture through a sieve. Now add sugar and lemon juice to it. Add extra cold water and mix well. Serve cold.
Raw Tomato Juice with Cardamom & Ginger
Take all the ingredients except ice cubes in a blender, puree till smooth. Sieve this mix, add more water if needed. Put few ice cubes in a cup, pour in juice and serve immediately.

make sure you use ripe tomatoes, unripe tomatoes tends to be sour and lack the rich tomato flavour.
you can use sugar as per your taste. honey or maple syrup can be used for sugar.
lemon juice is important to make the juice fresh and tasty.
along with ginger, cardamom, you can use mint leaves for fresh taste.
some strawberries can be added into the juice along with tomatoes for bright summery taste.
Storage
This juice can be made in bulk and stored in fridge for upto a week.
