Tomato Pasta Soup Recipe

A hearty soup made using tomatoes and other veggies along with pasta. Addition of pasta makes this more comforting and filling and makes a great lunch or light dinner.

Olive Oil or Butter -1 tblsp Onion - 1 medium size chopped Garlic- 6 cloves peeled Tomato - 5 chopped Capsicum / Bell Pepper - ½ chopped Small Pasta - 1 cup Sweetcorn - 1 cup frozen Salt to taste Sugar to taste Black Pepper to taste Water as needed
Take oil or butter in a pressure cooker.
Add in onions, garlic and capsicum and saute for a min.
Add in tomatoes and mix well.
Add water and cover the cooker. Pressure cook for 4 whistle. Turn off the heat and let the steam escape all by itself.
Open the cooker and cool the mix. Take it in a blender and puree till smooth.
Add it in the pan, add more water, salt and sugar and mix well. Bring it to a boil.
Add in pasta and cook till done.
Add in sweetcorn and cook for 2 to 3 mins more.
Spoon it into serving bowl and top with black pepper and serve.
