Tea time at most of the home is never complete without a cake and this super fluffy vanilla tea cake is one of the simplest and easiest cakes you can bake. It is made with simple everyday ingredients like flour, egg, butter and sugar. As it bakes beautifully with a golden top and fills the kitchen with its warm vanilla aroma. It tastes soft, light and perfectly sweet.
Pre preparation - Preheat oven to 170 degree C. Line a 8 inch round cake pan with parchment paper and set aside.
Whipping Eggs - Take eggs in a bowl and whisk till it is frothy. Add ½ cup sugar little by little and whip till frothy and light using an electric beater. Set this aside.
Wet Ingredients - Now in another bowl. Take butter, ½ cup sugar and vanilla and whip till creamy using an electric beater. Pour in milk and mix well until combined.
Dry Ingredients - Add in flour, baking powder and salt and mix well using an electric beater until just combined.
Make Cake Batter - Now add in the beaten fluffy eggs little by little and fold gently using a spatula. This will lighten the batter.
Baking - Once the batter is well mixed, spoon this into the prepared cake pan and top with cashews. Pop this in oven and bake for 30 to 35 mins. Remove from oven and cool completely. De mould, slice and serve.
