Vanjaram Meen Kulambu also known as King fish or Seer fish curry made with freshly roasted masala made with coriander seeds, dry red chillies, coconut, tamarind and drumstick. This curry taste amazing with hot rice or with chapati.
Soak tamarind for 15 minutes and squeeze to remove the pulp. Strain and set aside. If using kudampuli just soak them in hot water for 15 minutes.
Heat 1 teaspoon oil in a pan and add in coriander seeds, cumin seeds, dry red chillies. Saute and roast for 5 minutes until aromatic and toasted. Add in coconut and roast for 2 to 3 minutes until well roasted.
Now Take this in a blender and grind it to a fine paste. Set aside.
Heat coconut oil in a kadai. Add in mustard seeds, fenugreek seeds and let them sizzle.
Now add in shallots, green chillies and curry leaves. Sprinkle some salt and cook for 2 mins or so.
Add in drumstick, brinjal and raw mango and water. Now add in the ground masala, tamarind and water. Taste and adjust the salt. Bring this to a full boil.
Once it starts boiling, add in fish pieces and cook for 5 minutes.
Take it off the heat and let it stay covered for 2 hours for the flavour to mingle. Serve with rice.
