    Vanjaram Meen Kulambu Recipe

    Vanjaram Meen Kulambu also known as King fish or Seer fish curry made with freshly roasted masala made with coriander seeds, dry red chillies, coconut, tamarind and drumstick. This curry taste amazing with hot rice or with chapati.

    Vanjaram Meen Kulambu Recipe

    Over the years I have made so many fish recipes and shared on this blog. This is one of the flavourful fish curry you will ever make. It has freshly roasted and ground spices and coconut as base.

    I made this base specially for vanjaram, seer fish or king fish. It taste absolutely delicious and is super easy to make.

    About Vanjaram Meen Kuzhambu

    Vanjaram is also known as seer fish, king fish. It is one of the exclusive fish variety and loved by many. I have already shared vanjaram fish fry and this is one curry which I make often.

    This curry is similar to my Goan fish curry. The base is coconut, dry red chillies, coriander and cumin seeds. It is cooked with drumstick, brinjal and raw mango to create the curry.

    I used kudampuli in this recipe, you can use regular tamarind also. Make sure to cook this curry atleast 2 hours in advance for the flavours to deepen.

    Ingredients

    • Fish - I used vanjaram for this recipe. it is also known as seer fish or king fish.
    • Coconut - the base for this curry is fresh coconut.
    • Masala Ingredients - dry red chillies, coriander seeds, cumin seeds is roasted until well toasty before blending with coconut.
    • Coconut oil - I prefer using coconut oil whenever I make fish curry.
    • Whole Spices - mustard, fenugreek seeds is used in tempering.
    • Shallots - chopped shallots if sauted in coconut oil along with green chillies and curry leaves.
    • Vegetables - as far as vegetables, I used raw mango, drumstick, and brinjal along with fish curry.
    • Tamarind - you can use kudampuli or tamarind.

    Step by Step Pictures

    1)Soak tamarind for 15 minutes and squeeze to remove the pulp. Strain and set aside. If using kudampuli just soak them in hot water for 15 minutes.

    Masala for fish curry

    2)Take all the roasting ingredients for the masala.

    3)Heat a teaspoon of oil in a pan. Heat 1 teaspoon oil in a pan and add in dry red chillies, coriander seeds and cumin seeds. Saute and roast for 5 minutes until aromatic and toasted.

    4)Once the spices are toasted. Add in coconut.

    5)Roast the coconut with the spices for few more minutes.

    6)Take this in a blender.

    7)Add little water and grind it to a fine paste. Set aside.

    Making Fish Curry

    8)Heat coconut oil in a kadai. Add in mustard seeds, fenugreek seeds and let them sizzle. Now add in shallots, green chillies and curry leaves.

    9)Stir fry this for 2 minutes.

    10)Add in brinjal, drumsticks, raw mango and mix into the oil and saute for 2 more minutes.

    11)Pour in water and bring it to a full boil. Cook this for 3 to 5 minutes until the vegetables is half cooked.

    12)Add in the ground coconut masala. Season with salt.

    13)Add in tamarind pulp or kudampuli soaked in water.

    14)Mix it well and bring it to a full boil.

    15)Once it starts boiling, add in fish pieces and cook for 5 minutes.

    16)Take it off the heat and let it stay covered for 2 hours for the flavour to mingle.

    17)Serve with rice.

    Ingredients

    For Tempering

    • 3 tablespoon Coconut Oil
    • 1 teaspoon Mustard Seeds
    • 1 teaspoon Fenugreek Seeds
    • 10 no Shallots (Sambar Onion) chopped finely
    • 2 no Green Chillies slit
    • 2 sprig Curry leaves

    For Curry

    • 500 grams Vanjaram (King Fish, Seer Fish)
    • 2 tablespoon Tamarind Pulp or 4 piece Kudampuli
    • 1 medium Raw Mango sliced
    • 1 no Brinjal chopped
    • 1 no Drumstick chopped
    • Salt to taste

    For Roasting & Grinding

    • 1 teaspoon Coconut Oil
    • 8 no Dry Red Chillies
    • 2 tablespoon Coriander Seeds
    • 1 teaspoon Cumin Seeds
    • 1 cup Fresh Coconut

    Instructions
     

    • Soak tamarind for 15 minutes and squeeze to remove the pulp. Strain and set aside. If using kudampuli just soak them in hot water for 15 minutes.
    • Heat 1 teaspoon oil in a pan and add in coriander seeds, cumin seeds, dry red chillies. Saute and roast for 5 minutes until aromatic and toasted. Add in coconut and roast for 2 to 3 minutes until well roasted.
    • Now Take this in a blender and grind it to a fine paste. Set aside.
    • Heat coconut oil in a kadai. Add in mustard seeds, fenugreek seeds and let them sizzle.
    • Now add in shallots, green chillies and curry leaves. Sprinkle some salt and cook for 2 mins or so.
    • Add in drumstick, brinjal and raw mango and water. Now add in the ground masala, tamarind and water. Taste and adjust the salt. Bring this to a full boil.
    • Once it starts boiling, add in fish pieces and cook for 5 minutes.
    • Take it off the heat and let it stay covered for 2 hours for the flavour to mingle. Serve with rice.

      I think it is Malabar tarmarind /Kudampuli not kokum.
