Equipment

Cooking Pot, Kadai or a wok

Ingredients
  

  • 15 no Ladies Finger, Okra chopped
  • 1 teaspoon Red Chilli powder
  • 1 teaspoon Mustard Seeds
  • 2 tablespoon Curd
  • 3 tablespoon Coconut Oil
  • 1 teaspoon Salt

Instructions
 

  • Heat oil in a kadai. Add in mustard seeds and allow them to pop. Now add in the lady finger and saute them in the oil for 2 mins.
  • Add in curd and mix well. Fry this on high heat till the curd evaporates and the lady finger gets nicely browned. Adding curd makes the sliminess out of the lady finger and makes it crispier. You can cook this as per your liking. If you want it to be crispier, cook it for longer.
  • Now add in salt and chilli powder and mix well. Switch off the heat and serve with rice and any gravy.

Notes

  • Choose young, tender bhindi which is fresh and green looking. You can also use red ladies finger which are available now. 
  • For spice, you can use chilli powder or pepper powder. 
  • Use a wide pan when cooking bhindi, which cooks faster and evenly, 
  • You can use any oil or choice, coconut oil adds best flavour.

Serving and Storage

You can enjoy vendakkai poriyal with any Kuzhambu of choice. Leftovers can be stored in fridge for up to 4 days and reheated in a pan for few minutes until hot.
