Ingredients
  

Dry Ingredients

  • 1 cup Whole Wheat Flour 120 grams
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Ginger
  • ½ teaspoon Baking Soda

Wet Ingredients

  • cup Curd (Plain Yogurt) 80 ml
  • ¼ cup Oil or Melted Butter 60 ml
  • ½ cup Brown Sugar 100 grams

Dried Fruits

  • 3 tablespoon Tutti fruity (candied mixed fruits)
  • ½ cup Seedless Black Raisins
  • ½ cup Mixed Nuts chopped finely
  • ¼ cup Water or Orange Juice (Wine) 60 ml

Instructions
 

  • Preheat oven to 180 degree C. Line a loaf pan with parchment paper and set aside.
  • Take dried fruits in a microwave safe bowl, add water or orange juice and boil for 2 mins in a microwave. Set aside to cool.
  • Take yogurt, oil, brown sugar in a bowl and mix well. Add in nuts and boiled raisin mix and mix well. Add in wheat flour, spice powders, baking soda and gently fold to combine.
  • Spoon it into a parchment lined baking pan and bake for 30 to 40 minutes. Insert a toothpick to check whether the cake is baked or not.
  • Remove it from oven and allow it to cool completely. de-mould. Slice and serve.
