    Whole Wheat Fruit & Nut Cake Recipe with step by step pictures. Cake filled with delicious nuts and fruits which is baked to perfect. This is a healthy fruit cake recipe.

    Healthy Fruit & Nut Fruit Cake Recipe

    Fruit and Nut Cake taste so fantastic and is perfect for this season. It is not only healthy but is very delicious too.

    This particular cake is made using wheat flour and it is eggless too.

    1)This cake needs no soaking of fruits in rum.

    2)It is an instant fruit cake recipe.

    3)This is a non alcoholic version.

    Even though this cake has no alcohol in it. It taste absolutely delicious. This cake can be made from start to finish in under 30 mins, Baking time extra.

    Tips to bake cake without an oven

    1)Use a heavy bottom pan with fitting lid.

    2)Ue hard anodised pan for best result.

    3)Dont use nonstick pan. since it is not ideal to heat nonstick empty.

    4)Use aluminium and indalium pan.

    5)You can use a pressure cooker for baking. If you are using pressure cooker, don't use whistle or gasket.

    Fruit and Nut Cake is a easy eggless version of christmas cake. This calls for minimum ingredients and taste so festive.

    Ingredients

    • Whole Wheat Flour - 1 cup 120 grams
    • Baking Soda - ½ tsp
    • Water - ¼ cup 60 ml
    • Curd - ⅓ cup 80 ml
    • Oil - ¼ cup 60 ml
    • Jaggery or Brown Sugar - ½ cup 100 grams
    • Cinnamon powder - 1 tsp
    • Ginger Powder - 1 tsp
    • Tutti fruity - 3 tblsp
    • Raisins - ½ cup
    • Chopped nuts - ½ cup

    (MY 1 CUP MEASURES 240 ML)

    Instructions

    • Preheat oven to 180 degree C.
    • Take dried fruits in a jug, add water and boil for 2 mins in a microwave. Set aside to cool.
    • Take curd, oil, brown sugar in a bowl and mix well.
    • Add in cinnamon powder, ginger powder and mix well.
    • Add in nuts and boiled raisin mix and mix well.
    • Add in flour and baking soda and fold gently.
    • Spoon it into a parchment lined baking pan and bake for 30 mins.
    • Remove it from oven and cool completely.
    • Unmould. Slice and serve.

    Healthy Fruit Cake Pictures

    1)Take tutti fruity in a jug

    2)Add in raisins

    3)Add in water and boil it for 2 mins.

    4)Add in curd in a bowl

    5)Add in oil

    6)Add in brown sugar

    7)Mix well

    8)Add in the raisin and dried fruit mix

    9)Mix well

    10)Add in wheat flour

    11)Add in baking soda, cinnamon and ginger powder

    12)Fold gently

    13)Spoon this into a cake pan

    14)Bake till done

    15)Un mould. Slice and serve.

      Thank you for the wonderful recipe. If I am using a pressure cooker or heavy bottomed vessel should I pour the mixture directly into it or in another vessel and keep it inside?

          Hi, if I want to make this into a Brandy Fruit Cake, how much Brandy can I add and at which point do I add it?

            Use around 1/4 cup. You could add it to the dried fruit and leave them to soak for few days before using.
