- ¾ cup All Purpose Flour / Maida 90 grams
- ¾ cup Whole Wheat Flour / Atta 90 grams
- ¾ cup Brown Sugar 150 grams
- ¼ teaspoon Salt
- 1 teaspoon Cinnamon Powder
- 2 teaspoon Baking Soda / Cooking Soda
- ¾ cup grated Zucchini
- ½ cup Raisins or any dried fruits
- 1 Egg
- ¾ cup Milk 180 ml
- ¼ cup Oil 60 ml
- 1 teaspoon Vanilla Essence
- My 1 cup measures 240 ml
Preheat oven to 180 degree C. Line a loaf pan with parchment paper and grease it well with oil. Set aside.
Take wheat flour, flour, brown sugar, salt, baking soda and cinnamon powder in a bowl and whisk well
Add the remaining ingredients and give a gentle mix. Dont over mix the batter.
Spoon this in loaf pan and bake for 55 mins to 60 mins.
Remove it from oven and cool it for 10 mins in pan and remove it from pan and cool it completely.
Slice and serve.
