Whole Wheat Zucchini Bread Recipe – Healthy & Moist Zucchini Bread Recipe

Such a lovely cake this is, i would call this as bread rather than a cake. Because it is a little dense like a banana bread but with a moist and soft texture. I really love adding zucchini to baked items because it makes the stuff really healthy and adds a nice moist texture to it. Actually you wont taste or smell zucchini in this recipe, it rather acts as a moist ingredients and melts into the bread.

I added dried fruits in this but you can use any nuts in this to make this bread. I will be sharing a very tasty banana bread recipe soon which i made recently.

Preparation Time : 10 mins
Baking Time : 55 to 60 mins
Serves: 5 to 6


Ingredients:

All Purpose Flour / Maida – 3/4 cup / 90 grams
Whole Wheat Flour / Atta – 3/4 cup / 90 grams
Brown Sugar – 3/4 cup / 150 grams
Salt – 1/4 tsp
Cinnamon Powder – 1 tsp
Baking Soda / Cooking Soda – 2 tsp
Zucchini – 3/4 cup grated
Raisans or any dried fruits – 1/2 cup
Egg – 1
Milk – 3/4 cup / 180 ml
Oil – 1/4 cup / 60 ml
Vanilla Essence – 1 tsp


(My 1 cup measures 240 ml)


Method:

Preheat oven to 180 degree C. Line a loaf pan with parchment paper and grease it well with oil. Set aside.

Take wheat flour, flour, brown sugar, salt, baking soda and cinnamon powder in a bowl and whisk well.

Add the remaining ingredients and give a gentle mix. Dont over mix the batter.

Spoon this in loaf pan and bake for 55 mins to 60 mins.

Remove it from oven and cool it for 10 mins in pan and remove it from pan and cool it completely.

Slice and serve.

Take your zucchini
grate it and set aside
measure your other ingredients
Take wheat flour in a bowl
add in all purpose flour / maida
add in salt, baking soda and cinnamon
add brown sugar
mix well
add in dried fruits, i used tutti fruity
add in grated zucchini
add in egg
add in vanilla
add in oil
add in milk
mix gently
now it is done
line a loaf pan with parchment paper and grease it with oil
spoon the batter in and bake
remove it from oven and let it cool
slice and serve
