Zucchini Dal also known as Zucchini paal curry or paruppu is made with fresh zucchini, moong dal and coconut paste. This is a healthy South Indian inspired dish which can be served with hot rice or roti.

Ingredients
  

  • 1 large Zucchini chopped
  • ½ cup Split Yellow Moong Dal (Pasi Paruppu)
  • 1 teaspoon Salt to taste

To Grind

  • ½ cup Fresh Coconut grated
  • 1 teaspoon Cumin Seeds
  • 2 no Green Chillies

For Rice Flour Slurry

  • 1 teaspoon Rice Flour
  • ¼ cup Milk or Coconut Milk

To Temper

  • 1 tablespoon Coconut Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Split Urad Dal
  • 2 no Dry Red Chillies broken into small pieces
  • 1 sprig Curry leaves

Instructions
 

  • Grind the ingredients given to grind to a coarse mixture using some water. Set aside.
  • Wash moong dal and take it in a pan. Add water and cook till dal is half cooked, it will take around 5 to 8 minutes.
  • Now Add in zucchini and cook till dal and veggies is completely cooked, it will take around 6 to 8 minutes. Now add in salt and mix well.
  • Add ground coconut into the curry and mix well. Cook for couple of minutes.
  • Mix rice flour with milk and add it into the kootu and mix well. Simmer for 2 mins.
  • Heat oil in a pan, add in tempering ingredients and let it sizzle. Pour this into the kootu and Mix well. Serve.
