Fluffy cream cheese muffins recipe which turns out super moist and fluffy. These muffins makes a great breakfast or brunch with a cup of tea or coffee.

Ingredients

All Purpose Flour (180 grams)

Baking Powder

Sugar + 2 tbsp (150 grams)

Soft Unsalted Butter (110 grams)

Instructions
▢
Preheat oven to 200 degree C. Line a 12 cup muffin pan with cupcake cases.

Take flour, baking powder in a bowl and mix well. Set aside.
▢
Take butter, cream cheese, vanilla, salt and sugar in a large bowl.
▢
Use a electric beater to whip for 1 to 2 mins.
▢
Add in egg and mix again till fluffy.
▢
Now add in flour mixture and milk and beat for few seconds.
▢
Now use a spatula to scrape the bowl.
▢
Use a icecream scoop to fill the muffin pans with batter. Fill the batter right to the top.
▢
Now sprinkle some sugar on top.
▢
Bake this for 20 mins till golden.
▢
Remove and serve warm.

Notes
Use butter and cream cheese at room temperature for better results.
Fill the muffin cases right to the top for perfect muffin top.
Baking at higher temperature are helps in rising.
I used normal sugar for sprinkling on top. You can use demerrara sugar or granulated sugar as well.
You can reduce the sugar amount to ½ cup if you want it less sweet.
Addition of lemon zest and orange zest can be added for more flavour.

Serve muffins warm with a cup of coffee or tea.
STORAGE SUGGESTIONS
Muffins can be stored at room temperature for up to 2 days.
You can store the muffins in a air tight container in fridge for up to 4 to 5 days.
Store muffins in freezer up to a month and warm in oven or microwave for few seconds.
