Soft & Chewy Granola Bar | Granola Bars Recipe

Granola Bars also known as muesli bar or oat bar is a perfect grab and go breakfast when you don't have much time on hand. Simple protein packed granola bars made with oats, flax seeds, nuts and dried fruits makes a satisfying snack or quick fix breakfast just like my homemade granola. Ingredients

For Granola Bars

  • 2 cups Rolled Oats or Quick Oats
  • 3 tbsp Flax Seeds
  • ¾ cup Brown Sugar
  • ¼ tbsp Honey
  • 1+3 tbsp Unsalted Butter
  • 1 tsp Vanilla Extract
  • ½ tsp Salt
  • ¼ cup Mixed Nuts cashews, almonds and pista

For Coconut & Cranberry Granola Bars

  • ½ cup Shredded Coconut
  • 3 tbsp Dried Cranberries

For Peanut Butter Granola Bars

For Chocolate Dipped Granola Bars

  • 2 cups Dark Chocolate

Instructions

For Granola Bars

  • Take a square pan, line with parchment paper or foil and grease it lightly with oil or butter. Set aside.
  • Heat 1 tbsp butter in a pan, add chopped nuts and roast till golden, strain them using a slotted spoon and set aside in a plate. In the same pan, add oats and flax seeds and toast them for 2 mins. Remove them to the plate as well.
  • Now to the same pan, take brown sugar, butter, honey  and mix them well. Bring it to a boil. Now boil this for 1 to 2 minutes. Take it off the heat, add vanilla and salt. Mix well. Add toasted oats, nuts and mix well till it comes together.
  • Spoon this in the prepared pan and smooth the top. Set this in fridge for 30 mins. Remove it from fridge and slice. Serve or store it in an airtight container.

For Coconut Cranberry Granola Bars

  • Toast your oats in a dry pan. Set aside. Make the sauce as mentioned. Add in coconut, cranberries to the sticky sauce. Add in oats and mix well in the sauce. Spoon this in the prepared pan and smooth the top. Set this in fridge for 30 mins. Remove it from fridge and slice. Serve or store it in an airtight container.

For Peanut Butter Granola Bars

  • Dry roast oats till light golden. Add in dried fruits and nuts and toast for few mins. Remove this to a plate and set aside.
  • In the same pan, melt peanut butter, butter, honey and melt it. Cook till it bubbles up. Add in the oats and nuts mix and combine.
  • Spoon this in the prepared pan and smooth the top. Set this in fridge for 30 mins. Remove it from fridge and slice. Serve or store it in an airtight container.

For Chocolate Dipped Granola Bars

  • Prepare granola bars as mentioned. Slice it into bars and place it in freezer for few hours.
  • Take chocolate in a bowl and place it over a sauce pan of simmering water. Melt till chocolate is completely melted.
  • Take bars from freezer and dip in the chocolate. Using a fork gently remove the granola bars and transfer to a parchment lined tray. Return back to fridge or freezer for few minutes for the chocolate to harden. Serve.
