Asafoetida

Dry red chilli

Cumin seeds

Kashmiri chilli powder

Turmeric powder

Black salt

Chaat masala powder

Jaggery

Roasted cumin powder

Salt to taste
Instructions
▢
Heat oil in a pan, add in whole spices and let them sizzle for a minute.
▢
Add in raw mangoes and toss well in the oil.
▢
Add salt and turmeric powder and mix well. Cook for couple of minutes.
▢
Add in chilli powder and toss well.
▢
Add in water. Cook till raw mangoes is just cooked.
▢
Now add in jaggery and mix well. Cook till it comes to a boil. Boil for 3 mins or so.
▢
Add in chaat masala powder, black salt, roasted cumin powder and mix well.
▢
Taste and adjust the seasoning.
▢
Serve.

This pickle can be stored in fridge for upto a month.
Aam ki launji can be served with paratha or roti as you prefer.
Adjust chilli level as per your liking.
Add more jaggery as you prefer.
