Ingredients
  

  • For Batter:
  • 1 cup Rice
  • ½ cup Toor Dal / Tuvaram Paruppu
  • ¼ cup Urad Dal / Ulundam Paruppu
  • ¼ cup Green Gram
  • Salt to taste
  • 1 tablespoon or to taste Red Chilli Powder
  • Water as needed
  • 1 chopped finely Onion
  • 2 chopped Green Chilli
  • 1 tablespoon finely chopped Ginger
  • Curry leaves
  • Coriander leaves a handful finely chopped
  • For Avial:
  • 2 peeled cut lengthwise Raw Banana / Vazhakai
  • ½ cup cut lengthwise Brinjal / Kathirikai
  • ½ cup cut lengthwise Carrot
  • ½ cup cut lengthwise Elephant Yam / Chena Kizhangu
  • ½ cup cut lengthwise Cucumber
  • ½ cup cut lengthwise Pumpkin
  • Curry leaves a sprig
  • 1.5 teaspoon Turmeric Powder / Manjal Podi
  • Salt to taste
  • ½ cup Water
  • ½ cup Thick Yogurt / Curd
  • For Grinding:
  • 1 cup grated Coconut
  • 2 Green Chilli
  • 1 teaspoon i used powder Cumin Seeds / Jeerakam
  • 4 Shallots / Sambar Onion / Chinna Ulli
  • For Tempering / Seasoning:
  • 2 tablespoon Coconut Oil
  • 1 teaspoon Mustard Seeds / Kaduku
  • 1 spring Curry leaves

Instructions
 

  • Soak Rice and Dal for 3 hours in water...Now drain this and make into a smooth paste ( not so smooth) by adding some water.
  • Take it in a bowl,Add some salt, chilli powder and mix well.Now add in chopped onion and green chilli, asafoetida, ginger, curry leaves, coriander and mix well. Set this aside till you make the avial.
  • Grind all the ingredients given in the list to a little coarse paste without adding any water. Set this aside till use.
  • Take all vegetables in a thick bottom pan. Sprinkle in ½ teaspoon of turmeric  powder, salt and curry leaves and mix well. Add in water and press the vegetables with your hands so everything is well immersed.
  • Cover this with a lid and bring it to a boil. Simmer this for 15 mins till the vegetables are done.
  • Now add in the ground masala and mix well.Cook this for 5 mins.
  • Take it off the heat and add in yogurt and mix well.
  • Now make seasoning. Heat oil and crackle mustard seeds and curry leaves. Pour this over the avial and mix well
  • Now for making ada dosa. Heat a tawa and take a ladleful of batter and spread it thinly on the tawa.Drizzle oil on the edges and cook for couple of minutes until light golden.Now flip it over and cook on under side too..Remove this and store in a hot case.
  • Serve with avial.
