Imagine a warm, comforting taste of oatmeal mixed with the soft, sweet flavour of ripe banana, that’s exactly what this banana oat muffin tastes in every bite. The combination of oats, wheat flour and banana make the muffin more healthier and filling , so it is the perfect recipe for breakfast, travel, kids lunch box or evening snack with a cup of tea and coffee.
Preheat oven to 200 degree C. Line 7 muffin cases with cupcake cases.
Take banana in a bowl and mash it roughly with fork. Add in oil, milk, vanilla, sugar and mix well.
Add in oats, wheat flour, baking powder, baking soda and salt. Mix well.
Use an ice cream scoop to fill the cupcake cases with the batter. Fill to the top. Place the tray into the oven in middle rack. Bake for 18 to 20 mins. Remove it and let it cool for 15 mins.
Serve warm.
Notes
Use overripe bananas or brown bananas for the super moist texture and sweetness.
Use an ice cream scoop to evenly fill the muffin tray.
Don’t over-mix the batter, else the muffin will turn harder.
To check if the muffin is done, insert a toothpick in the middle and if it comes out clean then it is ready. If not, again bake for 2 to 3 minutes.
