Bihun Goreng (Fried Vermicelli)

Ingredients
  

For Sauce

  • 4 tablespoon Tomato Ketchup
  • 3 tablespoon Red Chilli Sauce
  • 1 tablespoon Dark Soy Sauce
  • 1 tablespoon Vinegar
  • 1 tablespoon Sugar
  • ½ cup Water

For Chicken

  • 250 grams Boneless Chicken Breast sliced thinly
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Cornstarch
  • 1+1 tablespoon Oil
  • 1 teaspoon Red Chilli Powder

For Stir Frying

  • 4 tablespoon Oil
  • 3 tablespoon Garlic peeled and chopped finely
  • 4 no Spring Onions white part chopped finely
  • 1 no Carrot julienned
  • 1 cup Cabbage Shredded
  • 200 grams Tofu cubed
  • 4 no Eggs scrambled

For Rice Noodles

  • 300 grams Bihun Noodles (Rice Vermicelli)
  • Hot Water as needed

For Garnishing

  • 4 no Spring Onions green part sliced
  • ¼ cup Coriander leaves

Instructions
 

  • Mix all the sauce ingredients and set aside.
  • Mix chicken with the ingredients given along with 1 tablespoon oil really well. Heat 1 tablespoon oil in a pan add in chicken pieces and cook for couple of minutes until cooked. Remove it to bowl and set aside.
  • Now in the same pan. Heat 1 tablespoon oil, add in tofu cubes and fry for 2 minutes. Now drizzle 2 tablespoon of the sauce and toss the tofu really well. Cook for another 2 minutes. Remove and set aside.
  • Take rice noodles in a bowl. Cover with hot water. Let it soak for 1 minute. Now strain the noodles and set aside.
  • Now in the same pan. Heat 3 tablespoon oil, add in garlic, spring onion white part and stir fry for 30 seconds. Now add in carrots, cabbage and toss well in the oil for 4 to 5 minutes. Set aside the vegetables in the pan, drizzle in 1 teaspoon oil add in eggs, season with salt and pepper. Scramble the eggs slightly. Now mix the eggs with the vegetables.
  • Now add in the noodles and toss with the vegetables. Slowly add in the sauce mixture little at time and keep tossing. Add more sauce if needed. Taste and adjust the amount of sauce needed. Now add in cooked chicken, tofu and toss well. Stir fry everything on high heat for 5 minutes.
  • Now add in spring onion greens, coriander leaves and mix well. Taste and adjust the seasoning. Serve hot.

Notes

  • Don’t over soak the rice noodles, the rice noodles will continue cooking in the stir frying process.
  • Taste and add as much sauce as needed. You can add in some water if your noodles looks little dry.
  • Shrimp, bok choy, bean sprouts can be added when stir frying.
  • Make sure to use a large pan or wok for stir frying so the noodles doesn’t get mushy.
  • You can flavour the noodles as per your taste.
