    Bihun Goreng also known as Beehoon Goreng, a popular Malaysian Indonesian fried vermicelli recipe. Rice vermicelli stir fried with vegetables, protein like chicken, prawns and tofu with sauces is a popular street food dish in many Asian countries. Learn how to make perfect bihun goreng or meehoon goreng with stepwise pictures and video.

    One of my subscriber gifted me a packet of bihun noodles from Malaysia and told me that it is a popular noodles and try cooking with it. It is the first time I got to try my hands on it. I made a simple stir fry bihun with vegetables and protein. To my surprise it turned out super delicious. I loved how fluffy the texture of rice noodles turn out even when tossed on high heat.

    What is Mee hoon / Bihun?

    Mee Hoon/Mihun/Bihun/Bee Hoon or rice vermicelli is made from, rice! It is usually stir fried with sauce, vegetables, protein. also used in soups, salads. It may look similar to glass or cellophane noodles which is made with mung beans. But this one is made with rice and much more sturdier. 

    Even though both noodles is made with rice. Mee hoon is slightly thicker while Bee Hoon is thinner vermicelli type noodles.

    About Bihun Goreng

    Bihun Goreng is Fried rice vermicelli with vegetables, protein and sauces. It is one of the most popular street food dish in many Asian countries like Malaysia, Singapore, Indonesia. Eve though it is called with many names like Mee hood goreng, Singapore fried noodles, Malaysian fried vermicelli, Fried mee hoon, Bihun Goreng. 

    Fried bee hoon, also called 炒米粉, char bee hoon, rice noodles or rice vermicelli is a typical popular staple in Singapore and Southeast Asia. The noodles is made with rice and is called as rice vermicelli which is stir fried with vegetables and sauces. 

    Bihun noodles is soaked in hot water for 1 minute and strained. This noodles is then stir fried with garlic, onions, vegetables, protein like tofu, prawns, chicken with sauces. The noodles is tossed in heat with sauce and water to make it softer in texture and chewy.  This noodles is easily customisable to your preference and taste. 

    Fried vermicelli is a comforting homely meal which many families cook at their home. They make it as per their taste preference. Each home make it entirely different from the others, there is no wrong way of making fried vermicelli. Just use a large wok, your favourite ingredients available in the fridge and you have a delicious fried noodles dish. Fried bee hoon is easy to make, all you need is to soak, strain and fry.  You can easily make this entirely vegetarian or vegan by skipping the chicken and egg. 

    Bihun (Fried Vermicelli) Ingredients

    Rice Vermicelli - I used bihun noodles (rice vermicelli). The brand which I used mentioned to soak them in hot water for 1 minute, strain and use. You can use any brand of rice vermicelli and prepare them as per package direction.

    Vegetables - I used cabbage and carrots. Fried vermicelli noodles is easily customisable. You can use vegetables like carrots, cabbage, mushrooms, bok choy, bean sprouts can be used. Some recipes uses dried shrimp as flavouring too. 

    Protein - In this recipe I used tofu, chicken and egg as my protein of choice. You can add any one of all as per your preference. 

    Sauces - I like to mix soy sauce, tomato ketchup, vinegar, red chilli sauce, sugar and salt for flavouring. You can even use oyster sauce too. 

    Flavourings - garlic, onions is used as main flavouring of the dish. It flavours the whole noodles when stir frying. 

    Herbs - be generous with the herbs like spring onions, coriander leaves. It adds flavour and freshness to the dish. 

    My Tips for Perfect Bihun Goreng

    Choosing noodles - make sure the noodles is cooked the right way. Every brand uses different cooking time. So adjust it accordingly. Read the package directions before cooking. 

    Sauces - the main taste to the bihun is the sauces used. So add as much sauce as required. Taste and adjust the seasoning. 

    Protein & vegetables - Be generous with the vegetables and protein. Also season them well for flavour. 

    Choosing the right pan - use large non stick pan for making fried vermicelli. I like to use large saute pan or wok for stir frying. 

    Serve hot - bihun taste great when served hot. So make it fresh and serve it immediately. 

    How to Make Bihun Goreng (Stepwise Pictures)

    1)Mix all the sauce ingredients and set aside. 

    2)Mix chicken with the ingredients given along with 1 tbsp oil really well.

    3)Mix chicken really well.

    4)Heat 1 tbsp oil in a pan add in chicken pieces and cook for couple of minutes until cooked.

    5)Add in red chilli powder.

    6)Once the chicken is cooked. Remove it to bowl and set aside. 

    7)Now in the same pan. Heat 1 tbsp oil, add in tofu cubes and fry for 2 minutes.

    8)Now drizzle 2 tbsp of the sauce and toss the tofu really well.

    9)Cook for another 2 minutes. Remove and set aside. 

    10)Take rice noodles in a bowl. Cover with hot water.

    11)Let it soak for 1 minute.

    12)Now strain the noodles and set aside. 

    13)Now in the same pan. Heat 3 tbsp oil, add in garlic, spring onion white part and stir fry for 30 seconds.

    14)Now garlic and spring onions is aromatic.

    15)Now add in carrots, cabbage and toss well in the oil for 4 to 5 minutes.

    16)Set aside the vegetables in the pan, drizzle in 1 tsp oil add in eggs, season with salt and pepper.  

    17)Scramble the eggs slightly.

    18)Now mix the eggs with the vegetables.

    19)Now add in the noodles and toss with the vegetables.

    20)Slowly add in the sauce mixture little at time and keep tossing.  

    21)Add more sauce if needed. Taste and adjust the amount of sauce needed.

    22)Now add in cooked chicken, tofu and toss well.

    23)Stir fry everything on high heat for 5 minutes. Now add in spring onion greens, coriander leaves and mix well.

    24)Taste and adjust the seasoning. Serve hot. 

    25)Enjoy.

    Expert Tips

    • Don’t over soak the rice noodles, the rice noodles will continue cooking in the stir frying process.
    • Taste and add as much sauce as needed. You can add in some water if your noodles looks little dry.
    • Shrimp, bok choy, bean sprouts can be added when stir frying. 
    • Make sure to use a large pan or wok for stir frying so the noodles doesn’t get mushy. 
    • You can flavour the noodles as per your taste.

    Equipment

    • Wok
    • Sieve or Colander

    Ingredients

    For Sauce

    • 4 tbsp Tomato Ketchup
    • 3 tbsp Red Chilli Sauce
    • 1 tbsp Dark Soy Sauce
    • 1 tbsp Vinegar
    • 1 tbsp Sugar
    • ½ cup Water

    For Chicken

    • 250 grams Boneless Chicken Breast sliced thinly
    • 1 tsp Salt
    • 1 tsp Black Pepper
    • 1 tbsp Cornstarch
    • 1+1 tbsp Oil
    • 1 tsp Red Chilli Powder

    For Stir Frying

    • 4 tbsp Oil
    • 3 tbsp Garlic peeled and chopped finely
    • 4 no Spring Onions white part chopped finely
    • 1 no Carrot julienned
    • 1 cup Cabbage Shredded
    • 200 grams Tofu cubed
    • 4 no Eggs scrambled

    For Rice Noodles

    • 300 grams Bihun Noodles (Rice Vermicelli)
    • Hot Water as needed

    For Garnishing

    • 4 no Spring Onions green part sliced
    • ¼ cup Coriander leaves

    Instructions

    • Mix all the sauce ingredients and set aside.
    • Mix chicken with the ingredients given along with 1 tbsp oil really well. Heat 1 tbsp oil in a pan add in chicken pieces and cook for couple of minutes until cooked. Remove it to bowl and set aside.
    • Now in the same pan. Heat 1 tbsp oil, add in tofu cubes and fry for 2 minutes. Now drizzle 2 tbsp of the sauce and toss the tofu really well. Cook for another 2 minutes. Remove and set aside.
