Carrot Kheer recipe is a simple Indian style dessert also known as carrot payasam or gajar kheer made by boiling the grated carrots in milk and then adding sugar and condensed milk to it. It is usually served after meals and can be eaten warm or cold.

Ingredients
  

  • 2 tablespoon Ghee
  • 3 large Carrot grated (Around 3 cups)
  • 1 litre Milk
  • ½ cup Sugar or to taste
  • ½ cup Sweetened Condensed Milk
  • ¼ teaspoon Saffron
  • 3 tablespoon Sultanas (Golden Raisins)
  • ¼ teaspoon Ground Cardamom
  • teaspoon Salt

For Soaking & Grinding

  • 15 no Cashews
  • ¼ cup Warm Milk

Instructions
 

  • Soak Cashews in warm milk for 15 minutes. Take it in a blender and grind to a smooth fine puree. set aside.
  • Heat ghee in a pot. Add in carrots and saute for 5 minutes. Pour in milk and mix well. Cook this for 15 minutes stirring often.
  • Add in sugar, saffron, raisins, cashew paste and mix well. Cook this for 10 more minutes. It will thicken the kheer.
  • Now finally add in the condensed milk, cardamom, salt and mix well. Cook for couple more minutes until it gets creamy.
  • Turn off heat and allow it to cool. Serve hot, warm or cold as per your liking.
