I love making kheer and payasam for desert , because they are so easy to make but delicious to eat. One of my latest favourite is this yummy carrot kheer. One day I was thinking to make some kind of desert for lunch.I found some carrots lying in the fridge.
I thought carrot halwa taste heavenly, why not I try some carrot kheer. I tried it out immediately and was quite happy with the results. This is best had cold, even though it is good warm.
Ingredients for Carrot Kheer Recipe (Carrot Payasam Recipe)
- Carrot - 2 large grated
- Sugar - ¾ cup or to taste
- Condensed Milk / Milkmaid - ¼ cup
- Cardamom / yelakai - 5 crushed
- Milk- ½ liter
- Ghee - 2 tbsp

How to Make Carrot Kheer Recipe (Carrot Payasam Recipe)
- Heat ghee in a pan. Add carrot and saute for 5 mins.
- Add in cardamom, milk and mix well. bring this to a boil.
- Cover and simmer the pan for 15 mins till the carrot is cooked.
- Take most of the carrot mixture in a blender and make to a puree.
- Transfer this to the kadai and mix well.
- Add sugar and condensed milk and mix well. Simmer this for 5 mins.
- Serve this chilled or hot.
