Carrot Pachadi Recipe (Kerala Style Carrot Pachadi)

Carrot pachadi is a delicious and refreshing side dish made with carrot, yogurt and spices. It is quite popular in Kerala and it is also known as carrot raita or tempered carrot salad. Carrot pachadi is served on the Onam Sadhya meal spread or you can serve with everyday meals like rice, biryani and pulav.

Ingredients

  • 1 teaspoon Coconut Oil
  • 3 no Shallots (Sambar Onion) peeled & chopped finely
  • 2 medium Carrot peeled & grated
  • 1 cup Curd (Yogurt)
  • Salt to taste

To Grind

  • ¼ cup Fresh Coconut grated
  • ½ teaspoon Cumin Seeds
  • 1 no Green Chillies
  • ½ teaspoon Turmeric Powder

For Tempering

  • 1 tablespoon Coconut oil
  • 1 teaspoon Mustard seeds
  • ½ teaspoon Split Urad Dal
  • 1 no Dry Red chillies broken into pieces
  • 1 sprig Curry leaves

Instructions
 

  • Take coconut, cumin seeds and green chillies in a blender. Grind them to a coarse mixture. Set this aside.
  • Heat 1 teaspoon coconut oil in a pan. Add in shallots and grated carrots. Saute this for 2 minutes.
  • Now add in the ground coconut mixture along with salt. Stir this into the carrot for 30 seconds. Take it off the heat and remove the carrot coconut mixture into a bowl to cool.
  • Once the carrot mixture has slightly cooled, add in yogurt and mix well. Taste and adjust the salt at this point.
  • Now heat oil for tempering. Once oil is hot, add in mustard seeds, urad dal and let them splatter. Add in dry red chillies and curry leaves and fry them in the oil.
  • Now pour this tempering over the pachadi and mix well. Serve with rice.

Notes

  • If you don’t want it spicy, then deseed the dry red chilli and add it to tempering. 
  • Use fresh and thick curd for making pachadi.
  • Use the small or medium hole in the grater for finely grated carrots.
  • Whisk the curd well for a smooth and creamy pachadi.
  • You can even add grated beetroots, cucumber or finely chopped tomatoes along with carrot to make pachadi.
