Cheese muffins is an easy and simple savoury muffins made with flour, cheese, yogurt and flax egg. The recipe which I shared here is eggless and uses flax egg instead of regular eggs. Perfect to pack in kids lunch box or serve as after school snack.
Preheat oven to 200 degree C (400 degree F). Grease a 12 cup mini muffin pan with little oil using a pastry brush and set aside.
Make flax egg. Mix ground flax seeds with water until combined. Set aside for 10 minutes.
Now mix dry ingredients. Take flour, salt, sugar, baking powder, baking soda in a bowl and mix well. Add in grated cheddar cheese and toss with the flour.
Add in yogurt, oil, flax egg and water. Mix well and make a thick batter.
Spoon into mini baking muffin pan and top with extra grated cheese.
Place this into the oven and bake for 15 mins. If you are using regular size muffin tray, it will take around 25 minutes for the muffins to be baked.
Once the muffins are baked, remove from oven and allow it to cool for 8 to 10 minutes in the muffin pan. Remove the muffins from the pan and serve warm.
