Jowar Uttapam a healthy gluten free fermented dosa recipes made with jowar (sorghum) and dal. The dosa batter is made with basic ingredients like uraad dal, jowar and fenugreek to make the most delicious dosa batter. The batter is so versatile. You can make idli or dosa using the batter. Idli turns out super fluffy and Dosa is cooked golden brown and crispy.

Instructions
Take urad dal and fenugreek seeds in a bowl and wash well. Soak them in water. Take jowar in another bowl, rinse well and soak them in water. soak them separately for 4 to 5 hours.
Now take dal and fenugreek mix in a blender and add water little by little and make it into a smooth fluffy puree. Take this in a bowl.
Now add the jowar to the same blender and puree again till smooth. It wont get smooth, but try to get as smooth as possible. Don't add too much water, add little by little.
Now pour this in to the dal mix and add salt. Mix well and let it ferment for 8 hours or overnight.
Now make seasoning, heat oil in a pan, add mustard, urad dal, chillies, curry leaves and asafoetida. Add in onions, green chillies and salt and saute for a min.
Now add this in to the batter and mix well.
Heat a pan, spoon this mix into the pan and make like a thick uthappam..drizzle oil over it, and cook till golden on the bottom. Flip over and cook for few more mins.
Now remove it and serve hot with chutney..
Notes
Make sure to soak jowar and dal for at-least 5 to 6 hours to make smooth batter.
Instead of making uttapam, you can make it into dosa.
Stuff with paneer, onions, tomato, capsicum, cheese for more filling protein packed breakfast.
For spicy kick, add in a teaspoon ginger-green chilli paste.
For healthy version, cook in just ½ teaspoon of oil.
For kids lunch box, you can make mini jowar uttapam.
