Cholam idli and dosa batter is one recipes which I made recently and loved it instantly. It is a simple recipes and taste really delicious. The batter made is multi purpose, you can make idli, dosa, kuzhi paniyaram, uthappam using that batter.

Traditionally Jowar also known as cholam is ground into flour, which is used to make rotis, bhakri, cheela, and dosas, among other things. Today I am using it to make dosa batter and make uttappam. Check my cholam kuzhipaniyaram.
About Jowar Uttappam
Uttappam is a type of South Indian dosa. It is known as uthappam in Tamil Nadu and uttappa in Karnataka. It is known as oothappam in Kerala. known as ootappa or ootappo in Tulu. Unlike a traditional dosa, which is thin and crepe-like, uttapam is thicker and filled with toppings. usually accompanied by sambar and chutney.
The batter is made traditional by soaking and grinding the dals and millets. But some recipes uses shortcut with the usage of curd, rice flour or rava | semolina to make batter which can be made in instant. For better texture some recipes uses wheat flour in the dosa batter, but it adds gluten to the recipe.

Jowar Uttappam Ingredients
Jowar / Sorghum - Jowar is one of the healthiest grain you can include in your diet. 1 cup jowar contains around 140 calories and complex carbs and other nutrition like protein, iron, fibre.
Urad Dal - it helps lighten and ferment the batter. Also create spongy texture.
Seasonings & Flavourings - I used onions, green chillies, coriander leaves and ginger along with spices like mustard, curry leaves and more.

This white millet dosa is made with simple seasoning like onion, green chillies. But you can add tomatoes, onions, carrots, in the batter to make it much more filling. if you are making for kids, I recommend you to stuff the dosa with capsicum, cheese or even paneer for more filling nutritious breakfast.
Jowar uttappam is best served hot with coconut chutney, sambar or tomato chutney.

Step by Step Pictures
1)Take jowar , sorghum in a bowl and wash it multiple times.

2)take urad dal, fenugreek seeds in another bowl and give a good wash.

3)Cover both with clean water and let them soak for separately for at least 5 to 6 hours.

4)Once the dals and jowar is soaked. Strain them to remove excess water. Take the urad dal in a blender.

5)Add very little water and grind into a smooth puree.

6)take the ground urad dal in a container in which you are going to ferment the batter. Make sure it is slightly big so nothing over spills.

7)Now take jowar mixture in the same blender.

8)Grind to a smooth puree by adding some water.

9)Add jowar mix into the urad dal container.

10)Add in salt.

11)Mix this really well to form a smooth batter.

12)Cover and let this ferment for 8 hours.

13)Now the batter is fermented.

14)Give one good mix.

15)Take ingredients for flavourings.

16)Heat oil in a pan. Add in mustard seeds, split urad dal, dry red chillies, curry leaves.

17)Add a pinch of asafoetida.

18)Add in onions and green chillies if using.

19)Sprinkle some salt.

20)Mix this really well.

21)Pour this into the dosa batter.

21)Mix well.

22)Heat a pan on medium high heat. Grease with oil, pour a ladleful of batter. Drizzle oil around the sides.

23)Sprinkle the uttapam with coriander leaves if you want.

24)Once the bottom is golden brown, flip over and cook.

25)Serve.

Cholam Uttapam Recipe | Jowar (Sorghum) Uttappa
Equipment
Ingredients
For Batter
- 1 cup Cholam / Jowar / Sorghum
- ¼ cup Whole White Urad Dal
- ½ teaspoon Fenugreek Seeds
- Salt to taste
For Tempering
- 1 tablespoon Gingelly Oil
- 1 teaspoon Mustard Seeds
- 1 tablespoon Split Urad dal
- 2 no Dry Red Chillies broken into small pieces
- 2 sprig Curry leaves
- ¼ teaspoon Asafoetida
For Uttapam
- 1 large Onion peeled & chopped finely
- 2 no Green chillies finely chopped
- 3 tablespoon Coriander leaves finely chopped for topping uttapam
- 3 tablespoon Gingelly Oil for cooking uttapam
Instructions
- Take urad dal and fenugreek seeds in a bowl and wash well. Soak them in water. Take jowar in another bowl, rinse well and soak them in water. soak them separately for 4 to 5 hours.
- Now take dal and fenugreek mix in a blender and add water little by little and make it into a smooth fluffy puree. Take this in a bowl.
- Now add the jowar to the same blender and puree again till smooth. It wont get smooth, but try to get as smooth as possible. Don't add too much water, add little by little.
- Now pour this in to the dal mix and add salt. Mix well and let it ferment for 8 hours or overnight.
- Now make seasoning, heat oil in a pan, add mustard, urad dal, chillies, curry leaves and asafoetida. Add in onions, green chillies and salt and saute for a min.
- Now add this in to the batter and mix well.
- Heat a pan, spoon this mix into the pan and make like a thick uthappam..drizzle oil over it, and cook till golden on the bottom. Flip over and cook for few more mins.
- Now remove it and serve hot with chutney..
