Coleslaw is one of the classic sides that is so fresh, crunchy and has a creamy dressing. It is made with finely shredded cabbage, carrots and tossed with a rich mayonnaise mustard sauce dressing. It is a simple and versatile side that pairs perfectly with BBQ, grilled meats, sandwiches, burgers and wraps.
Wash all the vegetables and pat them dry. Peel carrot and grate them through large grates in your box grater. Shred cabbage finely using mandoline or knife. Chop spring onions fine. Set aside.
Combine dressing in a bowl. Mix mayo, salt, sugar, pepper, white wine vinegar and mustard in a bowl. Taste and adjust the seasonings.
Add cabbage, carrot and spring onion over the dressing and toss to combine. Toss lightly in the dressing to coat. Don't over mix, else the water from the vegetables may release into the coleslaw making it wet.
Serve immediately or keep in fridge for the flavour to meld together.
