The rich mayonnaise dressing mixed with crunchy vegetables creates a perfect balance of taste and texture. It adds an instant cool and tangy crunch to any meal and makes even simple food a complete one.

One reason this classic coleslaw recipe is so popular because of its simplicity and versatility. With just basic ingredients like cabbage, carrot, mayonnaise, mustard sauce and simple seasoning you can make this easy, creamy coleslaw in under 5 minutes.

Coleslaw when the creamy dressing coats the vegetables and the flavours get to mingle together. As many of my followers know, spicy grilled chicken is a weekly staple dish in my kitchen and this coleslaw is always the best companion for that.

More than just a salad, it's that cool, crunchy side that turns a simple meal into something satisfying and delicious.

Whether you're using it as a stuffing for burgers, wraps, sandwiches or serving it with fried chicken, fried fish, this coleslaw never disappoints.

    Ingredients

    • Cabbage : You can substitute with purple cabbage, lettuce or napa cabbage for different texture and color.
    • Carrot : Carrot adds a natural color and sweetness to the coleslaw.
    • Spring onions : Spring onions add a mild onion flavour that compliments the creamy dressing without overpowering.
    • Mayonnaise : Mayonnaise is a creamy, rich and smooth dip that makes the coleslaw so irresistible. For a lighter version, use greek yogurt or sour cream as a substitute.
    • Mustard : Mustard adds a tangy, spicy kick. You can add dijon mustard, honey mustard or even ground mustard can be used.
    • White wine vinegar : White wine vinegar gives the coleslaw a fresh, tangy flavour and balances the creaminess of mayonnaise.
    • Seasonings : salt, sugar, pepper is added as seasoning.

    Step by Step Pictures

1)Start by shredding cabbage into thin shreds. You can use a knife or use a mandoline.

2)Grate some carrots. I like to use large size grater.

3)Chop spring onions fine. You can use regular onions too.

4)For making dressing. Take mayonnaise in a bowl, add in mustard paste or sauce.

5)Add a dash of vinegar. I like to use white wine vinegar. Any vinegar would work.

6)Season with salt, pepper and sugar. Instead of sugar you can use honey.

7)Mix well, taste this and adjust seasonings and vinegar.

8)Add in all the prepared veggies. Cabbage, carrots and spring onions.

9)Toss lightly in the dressing to coat. Don't over mix, else the water from the vegetables may release into the coleslaw making it wet.

10)Serve immediately or keep in fridge for the flavour to meld together.

    Expert Tips

    • Always use fresh vegetables for the best crunch and taste. Avoid using old vegetables.
    • Thinly shred the cabbage to give the coleslaw the classic restaurant look.
    • Sprinkle little salt on shredded cabbage and rest for a few minutes. Squeeze out extra water to prevent the coleslaw from turning watery.
    • Rest the coleslaw at least for an hour in the refrigerator before serving. This allows the flavours to blend beautifully.
    • To make it protein rich coleslaw, replace mayo with greek yogurt.

    Storage & Serving

Homemade coleslaw stays fresh for 1 to 3 days when refrigerated. Store them in an airtight container. Give it a quick stir before serving.

Serve this coleslaw along with grilled chicken, burgers, sandwiches, BBQs, tacos and wrap. For kids, serve the coleslaw with fish and chips, nuggets and fried chicken.
