Dragon Prawns Recipe (Dragon Shrimp)

Dragon Prawns also known as Dragon shrimp is a popular Indo Chinese recipe. Prawns is dipped in a batter and fried till super crispy and crunchy. The crispy prawns is tossed in a chilli sauce that has fried cashews, garlic which makes it unique. This spicy dragon prawns taste amazing with fried rice, or noodles.

Ingredients

  • 300 grams Prawns cleaned and deveined
  • Peanut Oil for deep frying

For Batter (Frying Prawns)

  • ¼ cup All purpose flour Plain Flour
  • ½ cup Cornstarch
  • ¾ teaspoon Baking powder
  • ½ teaspoon Salt
  • ½ teaspoon Black pepper powder

For Sauce

  • 1 tablespoon Peanut Oil
  • 2 no Dry Red chillies broken into small pieces
  • 10 no Cashews
  • 3 tablespoon Garlic peeled, chopped finely
  • 3 no Spring Onions (White Part) chopped finely
  • 3 tablespoon Red Chilli paste
  • 2 tablespoon Tomato Ketchup
  • 1 teaspoon Soy Sauce
  • 1 teaspoon Vinegar
  • ½ cup Water

For Garnishing

  • 3 no Spring Onions (Green part) chopped finely

Instructions
 

  • Heat oil for deep frying.
  • Take plain flour, cornstarch, baking powder, salt, pepper in a bowl. Slowly add water and make it to a smooth and slightly thick batter. The batter shouldn’t be too thick or too thin.
  • Dip prawns in the batter to coat evenly. Drop the prawns in hot oil and fry till golden brow and crispy. It will take around 5 to 7 minutes to get super crispy. The colour should be golden brown. That’s when the prawns stay crispy even when tossed in the sauce. Once the prawn is fried, strain it through a slotted spoon and place on some paper towel to remove excess oil.
  • When the prawns is frying, make the sauce. Heat oil in a pan. Add in garlic, spring onion white, dry red chillies and cashews. Fry till light golden in colour.
  • Add in red chilli paste, soy sauce, vinegar, tomato ketchup, sugar and mix well. Cook for couple of minutes. Add in ½ cup of water and bring it to a full boil.
  • Now add in 1 teaspoon of the leftover batter into the sauce and mix well to thicken. Let it cook for 1 minute.
  • Now add in the fried prawns into the sauce. Add in spring onion greens and toss to combine. Serve hot with rice.
