Drumstick soup also known as murungakkai soup is one of the healthiest soup you can enjoy during cold winter days. Take drumstick in a sauce pan, cover with water. Cook till drumstick is done. Cool it down, strain it using a sieve. Remove the flesh from the drumsticks. Reserve the stock and flesh.
Heat ghee in a pot. Add onions and garlic and saute for a min. Add drumstick flesh and mix well. Take it in a blender and puree till smooth.
Take stock and puree in a sauce pan. Bring it to a full boil. Remove the scum formed on top using a ladle. Simmer for 5 mins. Add cumin powder, salt and pepper. Add coriander leaves and mix well. Serve hot.
Notes
Use tender drumstick for taste and texture. it also helps remove the flesh easier.
Cut drumstick into large pieces in half which makes the cooking process faster.
Instead of onions you can use shallots. Garlic can be increased if you want the soup to be garlicky.
Ghee adds so much flavour, but you can use oil instead of ghee.
