Egg aviyal recipe also known as muttai avial or mutta aviyal is a less known South Indian(Kerala) recipe made with boiled eggs, coconut, chillies, shallots. Sometimes potatoes, brinjal is added to make it more filling. Taste amazing with ulundu sadam.
Grind ingredients given to a slightly coarse paste by adding some water. Set aside.
Now take 2 tblsp oil in a pan, add in onions and saute for a min. Add in potatoes, brinjal, salt, turmeric and stir fry for 2 mins. Pour little water and cover and cook for 10 mins until potatoes are cooked.
Add the ground masala and mix well. Cook for 3 minutes. Now add boiled eggs and simmer for 5 mins. Finally drizzle 1 tablespoon coconut oil and mix well.
Serve.
