    Egg Potato Avial (Egg Aviyal)

    Egg aviyal recipe also known as muttai avial or mutta aviyal is a less known South Indian(Kerala) recipe made with boiled eggs, coconut, chillies, shallots. Sometimes potatoes, brinjal is added to make it more filling. Taste amazing with ulundu sadam.

    Today's recipe is gonna be an awesome egg dish. If you want a quick side dish for rice, then I can assure you that this is the answer. Amma make this often when we don't have any vegetable in the fridge. It taste best with Urad dal rice.

    About Egg Aviyal

    Muttai avial also known as egg aviyal is a delicious side dish for plain rice. This taste amazing with ulundu choru.

    This is a common dish in my house. We make it at least twice a month. The perfect side dish for rice or ulundu choru is this egg avial, roasted coriander thogayal and paruppu. My absolute favorite.

    Simple curry made with boiled eggs, potatoes, brinjal cooked in a coconut, chilli, onion, ginger and garlic paste. This can be served with plain rice also. The pepper and cumin in the coconut paste adds so much flavour to the whole dish.

    Ingredients

    • Eggs - boil eggs and peel the shell. Make deep slashes on the egg so the coconut masala penetrates the egg.
    • Coconut paste - fresh coconut ground with chillies, ginger, garlic, pepper, cumin, onions, tamarind and turmeric.
    • Vegetables - even though it is optional, you can add potatoes and brinjal in this. Sometimes I even use drumsticks.
    • Coconut oil - best oil for this avial. It enhances the coconut taste.
    • Onions - saute the onions in oil to flavour the whole curry. you can add shallots instead of onions.

    Step by Step Pictures

    Saute Onions

    1)Heat coconut oil in a kadai. Add in sliced onions in the oil. You can add shallots too.

    2)Saute the onions for a minute until it turns translucent.

    Cooking Vegetables

    3)Add in potatoes and brinjal to the onions and mix well.

    4)Sprinkle salt and turmeric powder over the vegetables and mix well.

    5)Pour little water to the potatoes and mix well.

    6)Cover and cook for 10 mins until the potatoes are tender.

    Coconut Masala

    11)While the vegetables is cooking, grind the coconut paste. Take coconut, cumin seeds and black pepper in a blender.

    12)Add in turmeric powder, ginger garlic paste.

    13)Add in dry red chillies to this. You can use green chillies or red chilli powder as well.

    14)Add in onions, or peeled shallots.

    15)Add little tamarind. This is for sour taste.

    16)Add little water and Grind to a slightly coarse paste.

    Make Egg Aviyal

    17)Now you can see the potatoes are cooked.

    18)Add ground masala into the mixture.

    19) Mix this really well and bring it to a full boil. Cook for 2 to3 minutes.

    20)Boil some eggs, prick lots of holes or make slashes on the eggs. Add in the boiled eggs.

    21)Mix well and simmer for 5 mins.

    22)Drizzle a generous amount of coconut oil over the curry and mix well. Turn off the heat.

    23)Mix well and serve with rice.

    24)Enjoy.

    Ingredients
      

    To Temper & Vegetables

    • 2 tablespoon Coconut Oil
    • 1 large Onion peeled & sliced thinly
    • 1 large Potato peeled and cubed
    • 1 teaspoon Turmeric powder
    • 1 large Brinjal cubed
    • 1 teaspoon Salt to taste
    • 1 cup Water

    For Aviyal

    • 5 large Boiled Eggs
    • 1 tablespoon Coconut Oil to drizzle end

    To Grind

    • 2 cups Fresh Coconut grated
    • 2 no Dry Red Chillies
    • 2 teaspoon Cumin Seeds
    • 2 teaspoon Black Pepper
    • 1 tablespoon Ginger Garlic Paste
    • 1 small Onion or use 4 shallots (peeled & chopped)
    • 1 tablespoon Tamarind Paste
    • 1 teaspoon Turmeric Powder

    Instructions
     

    • Grind ingredients given to a slightly coarse paste by adding some water. Set aside.
    • Now take 2 tblsp oil in a pan, add in onions and saute for a min. Add in potatoes, brinjal, salt, turmeric and stir fry for 2 mins. Pour little water and cover and cook for 10 mins until potatoes are cooked.
    • Add the ground masala and mix well. Cook for 3 minutes. Now add boiled eggs and simmer for 5 mins. Finally drizzle 1 tablespoon coconut oil and mix well.
    • Serve.
