Equipment

  • Cooking pot
  • Steamer

Ingredients
  

  • 2 large Raw mango peeled & chopped
  • 3 tablespoon Sambar Powder
  • ½ cup Jaggery or Sugar

For Tempering

  • ¼ cup Gingelly Oil
  • 1 teaspoon Mustard seeds
  • ½ teaspoon Cumin seeds
  • ½ teaspoon Fenugreek seeds
  • ¼ teaspoon Asafoetida

Instructions
 

  • Peel and chop raw mangoes. Take them in a steamer and steam cook for 5 minutes. It has to be fork tender and not mushy. Set this aside.
  • In a kadai add oil and temper all the whole spices. Once the spices is sizzled. Reduce the flame and add in sambar powder. Mix the sambar powder in the oil.
  • Mix in the mangoes,Season with some salt.Now add in the jaggery and mix well. Let it simmer for 4 to 5 minutes,till oil separates from it.
  • Allow this to cool down and transfer this to a clean jar.
