Instant Mango Pickle
- Raw mango-3 chopped
- Oil- 2 tbslpn
- Mustard seeds Kaduku-1 tsp
- Cumin seeds jeerakam-1 tsp
- Fenugreek seeds Vendayam-1tsp
- Asafoetida Kaya podi-1 tsp
- Red chilli pdr-1tblspn
- Jaggery Sarkarai-1 cup
- Salt to taste
- In a kadai add mango,pour in a splash of water and cook till tender.
- In a kadai add oil and crackle all the seeds and then add in the red chilli pdr and mix well.
- Mix in the mangoes,Season with some salt.Now throw in the jaggery and mix well.
- Let it simmer for 10-15 min,till oil separates from it.
- Let it cool down and put this in a clean jar.
