- 2 large Potatoes
- 2 tablespoon Oil
- 1 teaspoon Fennel seeds
- 1 teaspoon Cumin seeds
- 1 Dry red chilli
- 1 teaspoon Kalonji / Onion Seeds
- ¼ teaspoon Asafoetida
- 2 teaspoon Kashmiri Red Chilli Powder
- 1 teaspoon Coriander powder
- 1 teaspoon Turmeric powder
- 1 teaspoon Amchoor Powder
- 3 tablespoon Coriander leaves
- Salt
Peel potatoes, chop them. Take it in a kadai. Add salt and cover with water. Cook till potatoes are tender. Drain and set aside.
Heat oil in a kadai. Add in the whole spices and seasoning. Let them sizzle.
Add in potatoes and salt. Toss them well in the oil. cook for few minutes.
Now add in the spice powders and toss well. Cook for 4 to 5 mins.
Add in amchoor powder and coriander leaves. Toss well.
Serve.
- You can use ghee instead of oil to cook the potatoes.
- The aloo curry can be served with roti or naan as you like.
- Add more chilli powder if you need it to be spicy.
- Instead of amchoor powder you could add some lemon juice in the end.
