Kurkuri bhindi is also known as ladies finger fry or Indian fried okra. It is a crispy and spicy snack made with ladies finger, spices and gram flour. Ingredients
  

  • 10 no Ladysfinger
  • 1 teaspoon Chilli powder
  • 1 teaspoon Garam Masala Powder
  • teaspoon Amchoor Powder | Dry Mango Powder
  • ½ teaspoon Turmeric Powder
  • 3 tablespoon Gram Flour | Besan
  • Salt to taste
  • Oil for Deep frying

Instructions
 

  • Wash and dry ladyfinger, cut the top off. Slit ladysfinger and cut them in half. So it is thin which turns crispy better. Take them in a bowl.
  • Add all ingredients except oil. Mix well gently so spices and gram flour coats the ladies finger. Set aside for 10 minutes. The ladies finger will leave some water which makes the masala coats better on the okra.
  • Heat oil for deep frying. Drop the ladyfinger in and fry till golden. strain using a slotted spoon and serve.

Notes

  • Use young tender ladies finger for taste, it cooks much faster.
  • Make sure the ladies finger is completely washed and dried before slicing. It prevent okra from going slimy.
  • You can add more or less spice powders as you prefer.
  • Along with gram flour, you can ad some rice flour or cornstarch too.
  • Fry bhindi just before serving to retain its maximum crispy texture.
  • Make sure your oil is hot enough before dropping in the bhindi, else the bhindi will absorb lots of oil.
  • If you are serving it as a starter, make sure you sprinkle with some chaat masala after it is fried. It adds a zingy taste to the end product.

Storage & Serving

Kurkuri bhindi is best served immediately once cooked. The longer it sits, it tends to lose its crispy texture.
This bhindi Kurkuri is a simple side dish that can be made and served with rice.  Fried Okra taste amazing on its own or with hot roti, curd rice or sambar rice.
Enjoy it on its own or with your favourite dipping sauce like mayonnaise or sweet chilli sauce.

Baking | Air Fryer Kurkuri Bhindi

  1. Marinate bhindi with spices and gram flour. Drizzle in 1 tablespoon of oil over the bhindi and toss gently.
  2. Spread them in a single layer in a greased baking tray. You can line the tray with parchment paper if you want.
  3. Place the tray inside a 200 degree C | 400 degree F preheated oven and bake for 15 minutes. Remove and serve immediately.
For Air fryer - Place the bhindi inside air fryer basket, air fry at 180 degree C for 15 to 20 minutes. Make sure you shake the basket in between for even cooking.
