Calzone is a popular type of pizza that is stuffed, folded in half and baked. These mushroom cheese calzone is stuffed with sauted onions, garlic, mushrooms and cheese which is baked until top is crispy and centre is gooey.
Pizza dough - Mix yeast and sugar in warm water. set aside for 5 mins. Take flour, salt and olive oil in a bowl. Add in the yeast water and make it into a soft dough. Cover and let the dough rise for 1 to 2 hours till it is doubled in size.
Make Mushroom Filling - Heat oil in a pan, add in garlic, onions and mushrooms and saute for 5 mins or so till cooked. Add in oregano, salt, chilli flakes and parsley and mix well. Now add in pizza sauce into the mushrooms and combine well. Set aside to cool.
Assembling calzone - Take the pizza dough, degas the dough. Divide the dough into 12 equal portions. Take one portion of dough, flatten it into a round. Now spoon some mushroom filling, top with ¼ cup of cheese and fold the calzone. Seal the edges, crimp it so it is well sealed. Make few slashes on top of calzone for the steam to escape.
Proofing calzone - Arrange the calzone on a parchment lined baking tray or greased foil tray. Let it rest and rise for 10 to 15 minutes.
Preheat oven - Preheat oven to 250 degree C. Set oven to heat with bottom rod only. So the bottom gets crispy when baked.
Baking Calzone - Now brush some butter or oil over the top of calzone. Place it into the middle rack of oven and bake for 15 to 20 minutes. Last 2 minutes, turn the oven to grill mode and bake for 2 minutes until top is golden in colour. Remove from oven, allow to cool for 5 minutes. Serve hot.
